Today we are talking self-made Cashew YOGHURT!!
It is not only delicious it is also so good for you.
After you make your first yogurt you will never buy one.
It is so delicious and healthy.
You know exactly the ingredients and we will never use fillers to make it creamier or to extend the expiration time.
Store-made products, need to do all that. For companies, it takes much more time to produce and distribute it. Until it actually ends up in the fridge of a store that can take days if not weeks. So commercial producers do not have a choice. The great thing is when you make your yogurt every 2 weeks and you do not sweeten it you can use it for savory and sweet dishes. You are able to include it into curries, your favorite sauce, or use it to prepare a salad dressing. As well as put it on top of comport, or mix it with your favorite jam or oatmeal.
There are so many options and they are all so delicious. The texture is similar to “creme fraiche”.
Our Cashew yogurt is creamy, tangy, nutty, and has a delicious flavor. BY THE WAY, you can use other nuts or coconut to make a delicious yogurt as well. Just try it all out. It is so much fun watching the fermentation and tasting the different stages.
Let the cashews soak for at least 6 hours before you use them that we call “to activate nuts“. That makes them so much easier to digest and for that reason so much healthier for our body.
Put the cashews in your high-power blender and fill it up with water. Blend it on the highest settings for 2-3 min until it gets slightly warm. Do not overmix it until it gets too hot, that could break the consistency. Depending on how much water you use the yogurt will have a more or less thick consistency.
The perfect temperature to activate the probiotics is a bit over room temperature. Depending on how much you blend it, it will make it more or less creamy.
Place the mixture in a glass, or wooden bowl and mix in the probiotic powder. If you only get it in capsules) open them. Then stir the mixture well until there are no clumps and everything is well mixed. Never use any metal stick or metal bowls for that process. It could stop the fermentation. Make sure your probiotics do not have “PREbiotics” that would not work.
In case you have no probiotics you could use a spoon full of yogurt to mix that into. It will have a similar effect.
Now cover the bowl with a cheesecloth or use a paper towel. Fixate that around the bowl with a rubber band. Place it at room temperature and let it hang out overnight to start the activation.
If you like the taste a bit tangier you just keep it outside the fridge. When you have the right taste you place it in an airtight container and place it in the fridge. I use it in the next 10 days. (but usually, it is gone way before) .
2 cups of cashews
1.5 to 2 cups of water
3 capsules of probiotics
Place the activated and rinsed cashews into the blender and top it off with water.
Blend it until it has your preferred creamy texture and it is getting warm around 1.5 minutes.
Makes sure it is well mixed inside your blender, there should be no lumps. Transfer into a mixing bowl and stir the probiotics into the mixture. Only use a rubber or wood spoon. Cover the bowl with a paper towel or a cheesecloth and let it sit in a slightly warm spot overnight, Stire it ever so often. After you try it and it has the right tanginess you close the lid and store it in the fridge.
You can use this yogurt in so many ways.
